Grade choice is often discussed late, after aesthetics are fixed. For coastal Victoria and food environments, late changes are expensive. We recommend locking grade, finish direction and cleaning regime when the kitchen or plant layout is still flexible.

304 stainless is common for commercial kitchens; more aggressive exposures may justify 316 or specific pickling/passivation. Mild steel with a suitable galvanising or coating system remains appropriate for many structural items if maintenance is planned.

We see failures when dissimilar metals are coupled without isolation, or when carbon steel grinding contaminates stainless nearby. Our workshop separates processes and documents handling for hygiene jobs.

Match the material to the cleaning method, not only to the corrosion map. If caustic wash-down is weekly, discuss crevice-free joints and accessible drains early.
